SUMMER 2021

SUMMER PANTRY - THURSDAYS at 10AM EST

After decades of being told that only “local” ingredients would do, the pandemic restrictions reintroduced us to the importance of a well-stocked pantry…so much so that people were hoarding canned beans, dried pasta and pounds and pounds of flour. 

Historically, pantries were an integral part of domestic life—not the domain of celebrity chefs and cookbook authors, but of the everyday home cook—and our Summer semester highlights what to stock for the season.

Summer pantries have a different vibrancy. We’ll fill our shelves with ephemeral treasures, providing intense flavors and simpler meal preparation for hot weather culinary adventures. Focusing on what works for this season, our seven class series covers no-stove sauces, special salads, slaws and sides, quickie pickling, and personal picnics. This series of Summer pantry staples teaches us how to showcase what we find in our markets to ramp up what's on our plates.

How do remote cooking classes work?

The past year made it so hard to connect with friends, family and new people — not to mention new skills! The Academy responded by designing remote Zoom classes that work just like any cooking class, except ours can be taken from the comfort of your own kitchen. Classes are limited in size and Suzanne checks progress to make sure everyone stays on track. The other benefit is that unlike many live cooking classes, the Dean won’t be there to fix your mistakes for you. The Academy is proud of its philosophy that the best way to learn is by doing. For more specific questions on courses or format, contact us.

Can I take my class with a friend?

Yes! We know that cooking together is one of life’s greatest joys. The Academy is happy to have your friends, family or guests join you on your screen, but we ask that you respect Zoom and classroom etiquette when doing so. That means keeping yourselves on mute while Suzanne is instructing and nominating one person in your group to ask questions.

Are there any prerequisites needed to take this course?

Absolutely not! These courses are for all skill levels — you don’t need to know anything at all to start learning how to cook or entertain.
